An Apple a Day

Come fall, one of my favorite things has always been the annual trek to the local apple orchards to ogle, and eventually buy, a bunch of beautiful, tasty, and nutritious apples. In years past, most of the apples I bought were made into pies. And, oh my... they sure were yummy! hehe

But these days... I'm trying to avoid pie of any sort. And, I was just wondering... do any of you have any healthy apple recipes that you'd like to share? I do love eating fresh apples as a snack... but sometimes I am in the mood for something just a little bit more exotic than that. Know what I mean?

So... if any of you have any tasty and nutritious apple recipes... I'd sure appreciate hearing from you! Thanks in advance! :)

Hey! I have a recipe, for once! (If you knew how monumental this is, you would be falling over lol) Anyhoozle, here it is:

Grilled apples. Seriously. I was casting around my kitchen for stuff to grill with my chicken and Summer squash one night and decided to try grilling an apple. It was so. Freaking. Good!

And easy. Wash, quarter and core an apple. (Or more... Do one per person.) Thread the quarters lengthwise on skewers, spray lightly with Pam and toss them on the grill. Cook until the apples are firm/tender. If you have any burnt spots, don't freak out. They slip right off and the fruit under them is fabulous.

If you grilled a tart apple, sprinkle with sweetener of choice or dump on a little sugar free Torani or a puff of low cal whipped cream or topping. Use your imagination.

So there you have it. And "original recipe" from a cooking challenged fellow blogger. :D

How about baked apples? Core apple and put in raisins and cinammon- just like an apple pie but without the cals!

My favourite is to make apple sauce. Put roughly chopped apples into crockpot, leave on low heat for 4-5 hours, when you come back there will be hot, gooey, 100% dessert. I sometimes add to yogurt
Yum!

I will definitely be following along to see these recipes. I have none, but I do love "pink lady" apples, chilled in the fridge. I eat at least one a day.

Thanks for helping to remind me it's time for a trek to get a new box of apples. Sorry I don't have any healthy apple ideas other than eating them raw or making homemade applesauce. Oh and I like them baked with chops, mmmm! ;-)

OMG, I have a great recipe! It's super simple and very tasty! Take an apple (or two) depending on their size and peel them (unless you like the skin?) Put them in a bowl and sprinkle with cinnamon (a lot or a little...) and a tablespoon of Splenda. Add in some nuts (your choice) and raisins (if you like raisins) and pour contents of bowl into a shallow baking dish. Place in the oven until the apples are soft and the nuts are toasty. Put a dab of fat free whipped cream on top and enjoy! It is essentially apple pie without the crust but adding raisins and different nuts make it wonderful. I prefer walnuts..but almonds, pecans, you name it..they all work! If you have leftovers they are good cold or heated up in the microwave!

Also, I use one apple as a serving but only if it's a nice size. Some apples are tiny so I may peel and dice up two because once you remove the skin and take out the core, there isn't much to it!

Hi CC! We must be thinking the same thing because I bought an apple corer today as I plan on eating more apples this fall, too. I read somewhere to peel and core an apple and line the apple pieces around a bowl with a little water and then microwave until tender - I think this took about 3-4 minutes, can't recall. Once the apples are cooked, sprinkle with Splenda or your sweetener of choice, and some cinnamon - omgoodness, this tastes like warm apple pie [or close enough!] YUM! Try it, hope you enjoy.

1 large apple, diced ~ 2 cups
1 large stalk celery, diced
2 T chopped walnuts
2 T craisins
2 T fat free Greek yogurt, vanilla flavor
2 T Canola mayonnaise
1/2 tsp. lemon juice

Combine everything in a bowl and mix well. Let it chill for a couple of hours. You can even put in more vanilla yogurt and less mayo if you want! I consider this to be 2 large servings

144 calories, 5.2 grams fat, 24g carbs, 3.7g fiber, 1 g protein

I must be honest, I've lost 91 pounds but I still eat pie and cake sometimes. Apple pie being one of my favorites. That being said, I think the suggestion to make baked apples is especially appealing. I plan on doing this soon too. They're delicious and make you feel wicked without the white flour carbs.

I eat apples every day. I enjoy to read your post. But I don not preffer the baked apple, are too sweet for me.

Hey, CC! I dunno what's up in your world or if you even have access to the internet, but girl, you need to post. It's not fair to people who care about your progress (or lack ofprogress, life, etc) to disappear. Come on, check in. :)

And stay accountable. Work the blog. Use it. Don't let the hard times ground you down. Stay connected. It helps (says the depressive who sometimes goes off on her own, too).

Hope the reason you're not on is a good one (I keep the faith).
